I have always been interested in tea and food pairings. More specifically, what tea would I order that would enhance the food I am eating.
One of my standard combinations is Egg Salad and Lapsang Souchong. If I am in the mood for an egg salad sandwich I know I will not go wrong if I order a cup of the smoky brew I will be happy with the meal.
Recently, I volunteered to work at a street festival’s tea stand. There were a host of food vendors presenting their home cooked cuisine.
The Chicken Tamales caught my eye and there were two types, green tomato or red tomato, I chose, the red tomato.
I went back to my booth for a lunchtime snack. I only had two specialty tea choices at hand, Pu-erh Leaf and Crimson Chai.
I had been drinking both Iced, as it was so hot. The sun brewed Pu-erh Leaf was surprisingly good. I brewed it Gong-Fu Cha style and got eight infusions with about one and a half teaspoons of tea.
Back to the food pairing, with my lunch snack choice I discovered an amazing, unexpected combination. The Crimson Chai Rooibos was wonderful with this meal.
The spice notes of Coriander, Fennel, Clove, Allspice, and Cardamom enhanced the spicy tamale flavors.
The Rooibos cooled down the “hot tamale” and mellowed the meal. What a nice unexpected treat and one that will be recorded as another favorite as my personal favorite for future reference.
