The final harvest is in from the peach tree.
Mom has been bringing the last of natures gifts three peaches at a time.
She has been wonderful making sure I get my bushel.
So what to do with peaches?
Well, I have never tried adding tea to a dessert item as I am less of a baker than a cook and since I admit to this fact here we go.
Rooibos Chai Peaches
Prep time 15 minutes Cook time 10 minutes
You’ll need
10 ripe but firm peaches
1 cup brewed rooibos chai
1/2 Valencia orange juiced
1/2 teaspoon vanilla extract
1 cup sugar
1/2 teaspoon cinnamon
Skin peaches and set aside. Brew tea, add sugar, orange juice, vanilla extract and cinnamon. Allow sugar and spices to dissolve.Reduce heat, add peaches and let simmer for about 10 minutes. Do not overcook as peaches will become too soft. Refrigerate for about 1/2 hour.
Serve over pound or angel food cake, add a little whipped cream or ice cream and you are good to go.
Rooibos Chai Peaches would also make a great topping warm over pancakes or waffles.
